This will be my first non recipe, recipe. I used vegetables that I was able to harvest from the Bambini garden, my home garden and some donations from a Bambini family. I used all that I had so that I why I don’t have proportions.
Tomatoes, cut in half or quartered depending on the size
Garlic, skins removed but cloves left whole
Salt and pepper
Throw everything on a cookie sheet in a single layer. Mix cover with olive oil, salt and pepper. Roast in a 200 degree oven for 4 hours. Once roasted, place in a blender or food processor and purée until smooth. Taste and adjust for seasoning.
This sauce can be used for pasta but is also a delicious soup. To freeze just place it in an airtight container or bag once cooled and you can taste summer in the cold of winter.
