Butternut Squash Mac & “Cheese”

1 Butternut Squash, peeled, seeded and cubed

2 cups broth, veggie, chicken or water

4 tbsp butter

3 Basil Leaves

Parmesean cheese

Salt and Pepper

1 Lbs pasta

Place butternut squash in a medium sauce pan with broth or water.  Cook over medium heat until soft.  Place in food processor with basil and butter.  Process until smooth.  Add salt and pepper to taste.

Please over cooked pasta of your choice and add parmesean cheese.


Note-  if you can’t get fresh butternut squash then frozen works great
