Coconut Buttermilk Pie

Prepare and chill a 9″  unbaked pie crust. Preheat oven to 425.

3 Tbls flour
1 cup sugar
1/2 cup melted butter
3 large eggs
1 cup buttermilk
1 cup flaked coconut
1 1/2 tsps vanilla extract
1/2 tsp almond extract

Combine flour and sugar in a large bowl, beat in butter, eggs and buttermilk. Add coconut and extracts. Blend well and pour into chilled pie crust. Bake at 425 for ten minutes and lower heat to 350 and bake for an additional 35 minutes. Do not open oven when lowering the oven temp. The pie will puff up as it bakes and collapse as it cools. Serve at room temp.
